Which type of Oil should we use?: 🧐
Are we eating the right Oil? 

Most commonly asked question by many so our Dietitian thought of writing this.

More than which type of oil, we need to first think about which method is used to extract the oil. Unfortunately people think shinier the advert, healthier the oil. Many take pride to cook their meals in olive oil everyday.

Let’s talk basics: Visible fat (fat that is added externally to our food) is to be taken in moderation each day. Every food we eat contain invisible fat to some extent. Even 100 gms of vegetable or fruit will have 0.5-1gm of fat. Fat is an integral part of a balanced diet, hence the quality and type taken is extremely crucial.

We need all types of fat: Saturated, Monounsaturated and Polyunsaturated Fat preferably in the ratio of 1:1:1

Sources of Fat:
Saturated: Ghee/ Butter/ Coconut oil/Palm oil/ all animal products including dairy foods/
Monounsaturated: Peanut, Olive, Canola, Avocado, Almond, Walnut
Polyunsaturated: Sunflower, Safflower, Corn, Sesame

Now as we always say ‘excess of anything is bad’ and hence sticking to and dominating 1 type of oil or fat is damaging. Indians have a habit of buying 5litre of plastic oil CAN each month and use same oil for frying, cooking, baking and so on. I have known some families who would buy even 15lites of aluminium tins of oil and use the same for many months or a year.

Stop buying 1 type of oil no matter what TV commercial has to say about it: cholesterol free, heart healthy, with goodness of olives etc etc. First of all stay away from any food or ingredient that needs a TV advert.

The Wisdom: Start buying half or 1 litres of variety of oils (Coconut, Mustard, Peanut, Sesame, Safflower, Flax oil, Sunflower) and use different oil for different tadkas. e.g. desi ghee can be used for dal, coconut oil for one of the sabzi, flax oil can be used for salad dressing or apply it on top of chapatis/Bhakris.
Choose local oils as much as possible. Make good use of peanut, coconut oil if in Maharashtra, definitely eat food made in coconut oil if in Southern India, Mustard oil if in North and so on…

One very important change needed is to switch over from Refined Oils to cold pressed or Kacchi Ghani Oils. So even if your favourite Olive Oil bottle says ‘Refined’, it’s not a healthy choice remember.

MAKE YOUR KITCHEN FREE OF WORD ‘REFINED’. So no more Refined Flour, Refined Sugar, Refined Salt and Refined Oil.

Why Cold pressed and Not Refined?

Ever wondered why cold pressed oils are making a come back these days? Because doctors/ physicians/ health professionals have understood the damaging effects refined oils have on the human body. Increasing rates of high blood pressure, cardiovascular diseases, kidney diseases, diabetes, high triglycerides, impaired insulin response, other chronic inflammatory diseases such as hypothyroidism, cancer etc. has direct correlation with over consumption of refined oils.

Refined oil undergoes various chemical and heat treatment that makes the final output very light and shiny in texture. The mechanical process makes the oilseeds lose the majority of nutrients. Refining process alters the chemical structure of natural oils and might create hydrogenated fat too.
Solvent Hexane added in the oil extraction method is a proven neurotoxin and a carcinogen. Your favourite desi Patanjali brand (health brand what they claim)also use this in the refining process.

Cold pressed oils are way healthier than refined oils. They are rich in antioxidants, vitamin E and oleic acid. Also, they are free from chemicals added to oils during refining process. They are also more aromatic and hence add more taste to the dishes.

Cold Pressed or Kachi Ghani oils are thicker in texture and hence adding 1-2 tsp is more than enough to add good flavour to the food.

If you have time and if you can afford, you may use your own oil extraction machine at home to extract oils from sesame seeds, peanuts, coconut etc. over the weekend as one of the activity. Many health conscious people use this these days. So it’s not very astonishing. The machines are easily available on amazon for purchase.

Where can you get these oils in India?
They are easily available in Health shops, organic shops, online too. If you are in Pune, I can guide you with the shops in detail.

Are they expensive?
They might be 100-200 Rs. higher than refined oils or if you know the source of a farmer who sells cold pressed oil without any branding will cost cheaper than branded cold pressed oils. Remember we are supposed to use oil sparingly so might as well invest in good quality oils.

Grind 1 cup grated coconut with 1-2 tbsp ginger ( chopped 1-2 green chillies, 2 fresh Amla, 15 -18 curry leave, rock salt to taste, 1 tsp roasted black pepper corns and 1/2 tsp organic jaggery )

Eat this anti inflammatory chutney with your Dosa, Idli, Paranthas or Chillas.

Simply mix these ingredients in the right proportions and make small candy sized balls.

Take 2-3 daily.

Ingredients:

Roasted Sesame Seeds: whole or powdered- 2 tbsp

Dry ginger powder (make sure it’s brown in Colour and not white)- 1/2 cup

Black pepper powder: 1.5 tbsp Desi gir cow ghee: 1 tbsp (use more if required to bind it well)

Soft black organic jaggery: 3/4 cup

alem haldi (use haldi with more than 5% curcumin content which gives it dark orange red colour, almost looks like ambehaldi): 1/4 cup

Mix and bind well. Shape them

Into small candy sized balls and you can eat 1-2 post lunch or dinner.
